  • Looking for Eggless Cake recipes

    Has anyone successfully made a tiered eggless cake? Anyone have a good tasty recipe?

    I have twin nieces who are allergic to eggs. We keep epi pens handy incase they have any contact with these tasty little items.

    This recipe is delicious. We want to be able to make it in a multitude of flavors. We want to try orange next. That means getting rid of the chocolate and putting in orange. We can't use any liquor. Please help. I am happy to bake repeatedly and I have a ready group of guinea pigs at my office. I will also be happy to post results and pictures.

    2 c sugar
    3 c flour
    2 t baking soda
    1 t salt
    6 T cocoa
    1/2 c oil
    2 T vinegar
    2 t vanilla

    2 c warm water
    Mix wet, add dry (well, that's the "easy way" my friend and I do it). Bake 350 for 30-35min.

    How do I change this to make a vanilla or yellow cake? Also how much orange would you add?

      Here's a recipe you can try out:

      2 1/2 cups Cake flour
      2 teaspoons baking powder
      1 teaspoon baking soda
      2 tbsp Superfine sugar
      1 (14 ounce) can sweetened condensed milk
      1 cup orange juice
      1 tbsp vanilla extract
      3/4 cup melted butter
      2 tbsp White vinegar

      Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

      Sift together the flour, baking powder and baking soda into a large bowl. In a large bowl, mix together the flour, baking powder, baking soda and Sugar. Make a well in the center and pour in the sweetened condensed milk, orange juice, vanilla and melted butter. Mix well and pour into prepared pan.

      Bake in the preheated oven for 30 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

      Here are some tips though:
      -Make the cake in shorter layers. Like 1" or so.
      -If you want to taste the orange in the cake i would suggest to add some zest too.
      -I have made it with different types of Juices like Pineapple, Apple etc.

      But remember all eggless cakes come out dense, though moist (more than the usual cakes made with eggs)
      I am sure there should be no problem stacking them.
