  • Bread Dough vs Pizza Dough: How do they differ?

    Where does bread dough and pizza dough differ in their respective baking processes? What about bread flour vs general flour?

    Saw Bread flour being placed beside all-purpose or general flour at the supermarket. Do they taste different too?

    It depends on what you are planning to bake, using which kind of flour.

    For example, if you are making bread, it is alright to use all-purpose flour (if you have ran out of bread flour). It just doesn't taste the same - you don't get the same crunch, or crust and the texture of the bread that comes out of the oven is different.

    I think this has something to do with the protein content in each, as well as the interaction with yeast which interacts better with the bread flour - rises up faster and 'better'.

    You have to try with experience..
